Ingredients for making sour sweet eggplant
10-12 small eggplants
oil for frying
1 tsp cumin
1 tbsp ginger (finely chopped)
1/2 cup tomato (finely chopped)
1 cup tomato puree
2 tsp coriander powder
1/2 tsp turmeric powder
1/2 tsp garam masala
2 tsp salt
1 tsp red chili powder
1 tbsp sugar
1 tsp vinegar
1/4 cup coriander leaves (chopped)
1 tsp green chili (finely chopped)

How to make Khatta Meetha Brinjal
Wash and wipe the brinjal and cut it.
Heat the oil and fry the brinjals on high flame till they become soft, keeping in mind that their shape and color remain intact.
Take 1/4 cup oil in another pan, add cumin seeds and when it starts spluttering, add ginger
Fry it till it turns light brown in colour.
After this add tomato and tomato puree, mix well and add coriander, turmeric, garam masala, red chili powder, salt, sugar and vinegar.
Fry well till the oil separates.
Add brinjal, green chili and green coriander.
Cook for about 5 minutes more.
Garnish with the remaining green coriander and serve hot.
